RHUBARB CUSTARD PIE
3cupsRhubarb diced into 3/4 inch pieces
1tbsFlour
3Eggs
1/4tspNutmeg
1 1/4cupSugar
1tbsButter, melted
1pinchSalt
Place the rhubarb in a pastry pie crust (9 inch pie pan used in photo). Melt the butter in a mixing bowl in the microwave then add the eggs. Beat the eggs and mix together with the rest of the ingredients then pour the mixture over the rhubarb. Add the top pastry crust. Sprinkle with cinnamon and sugar. Bake for 1 hour at 350 degrees.
